Green Tea Yatsuhashi
Yatsuhashi is a Japanese confectionery originating in Kyoto. Add matcha powder for refreshing flavor.

Ingredients (makes 4)
- 20 grams white flour
- 4 tablespoons water
- 40 grams rice flour
- 80 grams sugar
- 25 grams sugar
- 2 teaspoons matcha
- 70 grams strained bean paste
Instructions

- Mix the white flour and water in a heat-resistant bowl. Add the rice flour and sugar, then mix well. Steam the dough over high heat for 10 minutes or so.
- Put the steamed dough on a wet cloth, and knead about 10 times. Be careful not to burn yourself. 3.On top of a cutting board, sift the matcha with a powder sieve. Then place the dough made in step 2 and stretch out with a rolling pin until it is 3 mm thick.
4. Cut the stretched dough into seven 7 cm squares, then place the 10 grams of strained bean paste on each and wrap.
